There are all the water activities you could want right here. I live in Flamingo and have several restaurant recommendations in the Flamingo/Potrero/Brasilito area: Coco Loco, Surf Box (breakfast and lunch), Estero Azul (a typical “soda” on Potrero beach), Carpe Diem (breakfast and lunch), La Forketta (best Italian and pizza), Papya Restaurant (at Conchal Hotel), Masala (Indian food), and Patagonia del Mar. Be careful in either case you don’t want to find out after an accident or theft of the vehicle that you aren’t covered. You will also find private individuals offering their cars for rent. You could check some of the expat Facebook pages, where there are people running small companies with long-term car rentals. And leaving the car with someone who will sell it for you is just asking to get ripped off. Not to mention how many scams there are here that will make potential buyers wary. Then you have to deal with re-selling the car, in a country you do not know and perhaps in an unfamiliar language, to boot. Inventory is low, and the wait can be long.
